
How Tableware Shapes Taste Perception
A recent study shows that tableware significantly affects how we perceive food. The research investigated whether taste differences arise from bodily reactions or from the visual and neural properties of the utensils themselves.
Both the appearance and physical feel of cutlery were found to influence how food is experienced.
Oxford University Research on Cutlery
Researchers at Oxford University studied how the colour, size, and weight of cutlery affect taste perception. Participants sampled yoghurt using different spoons and were asked to rate the experience.
The majority reported that yoghurt tasted more filling and dense when eaten with a lightweight spoon compared to a heavier plastic one.
Colour, Contrast, and Taste
Spoon colour also played a role. Yoghurt tasted sweeter when eaten with a light-coloured spoon than with a black one.
Pink yoghurt tasted saltier and less sweet on a blue spoon than on a white spoon, likely due to reduced visual appeal. Interestingly, less contrast between food and utensil made the yoghurt taste sweeter overall.
